High West is dedicated to preserving and promoting the American West. American Prairie is a superb premium bourbon whiskey dedicated to one of the greatest land preservation projects of our time. The American Prairie Reserve in Montana is a 5000 Square mile land tract the size of Connecticut restored to what Lewis and Clark would have seen. High West will donate 10% of after tax profits from each bottle to the American Prairie Foundation.
High West Distillery was founded in 2006 by David Perkins and his wife, Jane. David, a former biochemist, was inspired to open his own distillery after seeing the parallels between the fermentation and distilling process and his own work in biochemistry during a trip to the Maker’s Mark Distillery in Loretto, Kentucky. In 2004, David and his family relocated to Park City, Utah to begin their new venture, where they began distilling in 2007. They chose Park City because of David’s love of the Old West and Utah’s little-known whiskey history (see Utah’s Distilling History for more). High West began with humble roots, opening a small, 250-gallon still and Saloon in an historic livery stable and garage. What was once a small operation in downtown Park City has grown to be an internationally-recognized brand with four unique locations. In 2015, High West opened their distillery in Wanship, Utah, which acts as a space for educational whiskey tasting, pairings and tours, and houses a 1600-gallon copper pot still. Meanwhile, the Saloon continues to operate as a must-visit gastro-distillery, featuring alpine-inspired western fare alongside the original still, the Nelson Cottage offers unique whiskey-paired dinners, and the Saloon at the Salt Lake City airport allows for some last tastes of High West on the way out of town. Whiskey Advocate 88 points - Minty and herbal on the nose, with notes of fresh oak, licorice, apricots, brown sugar, dried apples, orange peel, peaches, light coconut, ginger, and dried leaves. The palate is sweet up front, with a complex melding of butterscotch, spicy oak, orange slices, and chocolate fudge. The finish offers lots of spice, black pepper, bitter chocolate, and a pleasant note of almond nuttiness. A well-textured whiskey, with lots of spice and heat.  (May 2020)

Ultimate Beverage Challenge 93 points - Aromas of oak barrel, coconut, and brioche begin softly but grow in strength. Notably smooth and full in the mouth, with fig, caramel corn, butter cookies, and brown spices coming to mind. Wine Enthusiast 87 points - Made with a blend of straight Bourbons, this whiskey has a mild vanilla and resin scent. On the palate, flavors run to vanilla, cedar and citrus. Adding water brings out distinct cinnamon and peach notes, before fading into vanilla. (Jul 2015)
